Blue Cheese & Asparagus Salad image

Found this recipe on the back of a box of blue cheese and decided to try it. It's a nice blend of flavors and really sets off the asparagus and simple to make. Love that the asparagus is not over cooked and so fresh tasting;I guessed at the size can of mandarin oranges as don't have it handy. I used a small can as didn't want it to sweet - but there's a larger one if you prefer. I did add a teaspoon of balsamic vinager to mine for a little bit of bite, but since the original recipe did not call for it I left it out. Hope you like it.

This salad is a bit too bland for my taste. I would add some more seasoning, or maybe a different type of dressing.

I added some crumbled bacon to this salad, and it was amazing! The smoky flavor of the bacon really complemented the other ingredients.

I'm not a huge fan of blue cheese, so I used feta cheese instead. It was still delicious!

This salad is a great way to use up leftover asparagus. I always have a bunch of asparagus in my fridge, and this salad is a great way to use it up before it goes bad.

I'm not usually a fan of blue cheese, but this salad changed my mind. The cheese was creamy and tangy, and it paired perfectly with the sweet asparagus and crunchy walnuts.
