1 (30 ounce) can refried beans (pinto)
1/3 cup Corona beer
3 tablespoons tequila
2 teaspoons pureed canned chipotle chiles in adobo (to taste)
2 cups shredded monterey jack cheese
3 scallions, trimmed and thinly sliced

Steps:

  • Combine beans, beer, tequila and chipotle puree in a medium nonstick pot.
  • Cook partially covered over medium heat, stirring often for about 5-10 minutes.
  • Stir in 1 and a half cups of cheese and 3/4 of the onions.
  • Transfer to serving bowl.
  • Top with remaining cheese and onions and serve.
