Steps:
- 1 Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta. 2 Place the butter in a large warm serving bowl. Add the pasta and toss it with the cookie crumbs and raisins. Add the cheese and toss again. Add a little of the cooking water if the pasta seems dry. Serve hot. From "1,000 Italian Recipes." Copyright 2004 by Michele Scicolone. Used with permission of the publisher, Wiley Publishing, Inc. [email protected]I was hesitant to try this recipe because I'm not a big fan of amaretti cookies, but I'm so glad I did! The combination of the sweet cookies and the savory sauce was amazing. I will definitely be making this again.
