Instead of sandwiches in your brown bag -- why not try these burritos. Found in an old Taste of Home Magazine. Make ahead, freeze and pull one out when you need a quick lunch or snack.

Time 40m

Yield 15-20 serving(s)

Number Of Ingredients 11

1 lb lean ground beef
1 (16 ounce) can refried beans
2/3 cup enchilada sauce
1/4 cup water
3 tablespoons minced onions
1 1/2 tablespoons chili powder
1 1/2 teaspoons garlic powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
15 -20 flour tortillas (7 inch)
1 1/2-2 1/2 cups shredded cheddar cheese

Steps:

  • In a large skillet, brown the ground beef; drain.
  • Add the next 8 ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes.
  • Heat 3-4 tortillas in a microwave until warm, about 45 seconds. Spoon 3-4 tablespooms of the beef mixture down the center of each tortilla.
  • Top with 2-3 tablespooms of cheese.
  • Roll up. Wrap each burrito in paper towel; then in foil. Repeat with the remaining ingredients. Refrigerate if using right away. Or freeze.
  • Burritos can be eaten cold. If warming, remove the foil and place in microwave for about a minute. However, if frozen, they will take longer. I suggest warming for 45 seconds to a minute on 50% power to thaw some, and then completing the warming process at a higher power.

I love that these burritos can be customized to your own liking. I usually add some chopped avocado and salsa to mine. I also like to use a different type of cheese each time I make them.

I made these burritos for a party, and they were a huge hit! Everyone loved them. I think the secret is in the sauce. It's so flavorful and really brings the burritos together.

Overall, I thought these burritos were just okay. They weren't bad, but they weren't great either. I think I would have liked them better if I had used a different type of ground beef. The ground beef I used was a bit too lean, and it made the burrit

These burritos were a bit too greasy for my taste. I think I would have liked them better if I had drained the ground beef more thoroughly before adding it to the burritos.

I had a hard time getting the burritos to stay closed. I think I might have overfilled them. Next time, I'll be more careful about how much filling I put in each burrito.

These burritos were a bit bland for my taste. I think I would have liked them better if I had added some more spices to the ground beef. The beans and rice were good, but the overall flavor of the burritos was just a bit too mild for me.

I was pleasantly surprised by how much I enjoyed these burritos. I'm not usually a fan of ground beef, but it was really flavorful in this recipe. The beans and rice added a nice texture and heartiness. I would definitely make these again.
