Yield Makes about 1 cup

Number Of Ingredients 3

Unsalted butter, for baking sheet
1/2 cup sugar
3 tablespoons water

Steps:

  • Butter a baking sheet or line it with a Silpat (a French baking mat). Bring sugar and the water to a boil in a small, heavy saucepan, stirring until sugar dissolves; wash down sides of pan with a pastry brush dipped in water to prevent crystals from forming. Continue cooking, without stirring, until caramel is dark amber, swirling pan to color evenly. Remove from heat.
  • Immediately pour caramel onto prepared baking sheet. Let sit until hardened and completely cool; coarsely chop. Store in an airtight container at room temperature until ready to use, up to 1 day.

I've tried this recipe several times, and I can never get it right. The caramel always ends up too hard or too soft.

The caramel sauce is a bit too sweet for my taste, but it's still good. I might try reducing the amount of sugar next time.

I made this sauce for the first time last week, and it was a complete disaster. The sugar burned and the sauce was inedible.

The sauce is a bit thick, but that's how I like it. It would probably be too runny if it was any thinner.

This caramel sauce is the perfect finishing touch to the Three Nut Torte. It's rich, decadent, and has a beautiful amber color. It's also incredibly easy to make, and comes together in just a few minutes.
