Number Of Ingredients 8

1 lb asparagus
Marinade:
2 tbsp. sesame oil
3 tbsp. vegetable oil
1 clove garlic, minced
1 tsp soya sauce
3/4 cup rice vinegar
2 tbsp. minced ginger

Steps:

  • Cook asparagus until tender then blanch in ice cold water. Dry on paper towels. Prepare marinade; pour over asparagus and refrigerate overnight. Simmer rice vinegar and ginger until 50% reduced. Add 2 tbsp. sugar. Cool. Pour over asparagus about two hours before serving. (If longer, the taste will not be affected, but the asparagus goes a little pale and funny looking)

I'm not sure what went wrong, but my asparagus turned out mushy. I think I marinated it for too long.

I like to add a bit of red pepper flakes to the marinade for a little bit of spice.

I've tried this recipe with different types of vinegar, and I think white wine vinegar is the best. It gives the marinade a nice acidity.

I'm not usually a fan of asparagus, but this recipe changed my mind. The marinade really tenderizes the asparagus and gives it a delicious flavor.
