1 1/2 pounds ground beef
3/4 cup onion, diced
1 bell pepper, diced
1 taco seasoning packet
1/2 cup sour cream
1/2 cup mayonnaise
1 cup cheddar cheese, shredded & divided
1 small can (4 ounces) diced green chilies
1 (10-ounce) can Rotel diced tomatoes with green chilies
2 cups Bisquick
1 1/4 cup water, divided

  • Preheat oven to 350°F Brown ground beef, drain off grease. Add in diced onion, bell pepper, taco seasoning and 1/2 cup of the water to pan. This casserole was a bit bland for my taste. I added some extra spices and it was much better. I also think it would be better with some crusty bread or cornbread.

I've made this casserole several times now and it's always a crowd-pleaser. The leftovers are just as good, if not better, the next day.

This casserole was easy to make and turned out great! I used ground turkey instead of beef and it was still very flavorful. I also added some chopped carrots and celery to the mix.

I was a bit skeptical about this recipe at first, but I'm so glad I tried it! The beef was fall-apart tender and the sauce was delicious. I served it over mashed potatoes and it was the perfect comfort food.
