1 cup chicken broth
1 (15 ounce) can tomatoes
1 (15 ounce) can garbanzo beans
1 (15 ounce) can artichoke hearts, drained and chopped
2 tablespoons minced garlic
1 teaspoon dried basil
1/4 teaspoon dried oregano
salt and pepper

Steps:

  • combine all ingredients except salt and pepper in a large saucepan (2 qt minimum).
  • bring to a simmer, stirring occasionally.
  • reduce ragu to desired consistence.
  • season with salt and pepper to taste.
  • serve with brown rice or pasta.

This recipe was a bit bland for my taste. I added some extra spices and it was much better. The chickpeas were also a bit too firm for my liking. Overall, it was an okay recipe, but I wouldn't make it again.
