Celery Shrimp Bisque image

OOOHH This is good soup. If you want, you can puree a cup of soup and put it back in the pot for a thicker smoother texture.

Yield 10 cups

Number Of Ingredients 12

2 cups peeled diced potatoes
2 cups chopped celery
2 cups water
1/2 cup chopped onion
1 teaspoon salt
1 teaspoon pepper
4 cups half-and-half
1/4 cup flour
1 lb medium shrimp, cleaned
1/4 cup butter
1/2 teaspoon celery salt
1/4 cup dry sherry

Steps:

  • Combine first 6 ingredients in a large dutch oven.
  • Bring to a boil, cover and simmer 10 minutes.
  • Mix flour and half-and-half in small bowl.
  • Add to potatoes, stirring well.
  • Add shrimp.
  • Add butter and celery salt.
  • Cook on medium until thick and bubbly.
  • Stir in sherry.
