FILLING:
1/3 c water
2 Tbsp irish whiskey
1/2 c golden raisins
1 tsp vanilla extract
4-5 large tart apples, peeled, cored and sliced (granny smiths)
1/3 c granulated sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger
CRUMBLE:
1 c all purpose flour
1/2 c packed light brown sugar
6 Tbsp butter
1 c oatmeal, uncooked (not instant)
CREAM SAUCE:
1 c heavy cream (whipping)
2 Tbsp honey
2 Tbsp irish whiskey

Steps:

  • 1. To make the filling, in a small saucepan over medium heat, bring the water and whiskey to a boil. Stir in the raisins and vanilla. Remove from the heat, cover, and let stand for 1 hour, or until the raisins have absorbed most of the liquid.
  • 2. Preheat the oven to 375°F. Butter an 8- or 9-inch square glass baking dish.
  • 3. In a large bowl, toss the apples with the sugar, cinnamon and ginger. Stir in the raisins and cooking liquid and arrange in the prepared pan.
  • 4. To make the crumble, combine the flour, brown sugar and butter in a food processor. Pulse 4-5 times to form coarse crumbs. Stir in the oats. Sprinkle the mixture over the fruit and bake for about 40 minutes, or until the topping is golden and the apples are tender. Serve warm or at room temperature.
  • 5. Irish Whiskey Cream Sauce In a deep bowl, beat the cream with an electric mixer on high until soft peaks form. Dissolve the honey in the whiskey. Fold the honey mixture into the whipped cream and spoon over the crumble.

This crumble was a lot of work to make, and it didn't turn out as good as I hoped.

The crumble was good, but I think it would have been better with a different type of apple.

The crumble topping was a bit dry. I would add a little more butter next time.

This crumble is a bit too sweet for my taste. I would reduce the amount of sugar in the filling next time.

I'm not a big fan of whiskey, but I still loved this crumble. The apples and crumble topping were so good that I didn't even miss the whiskey.

This crumble is a great way to use up leftover apples. It's also a relatively quick and easy dessert to make.

I've made this crumble several times now, and it's always a crowd-pleaser. The whiskey cream sauce really takes it to the next level.

This Celtic apple crumble with Irish whiskey cream sauce was a hit at our dinner party last night! The flavors were perfectly balanced, and the crumble topping was just the right amount of crunchy and sweet.
