Number Of Ingredients 9

2 tablespoons coconut oil
1 large yellow onion, chopped
2 tablespoons flaked coconut
2 tablespoons chopped garlic
3 cups stemmed and chopped Swiss chard
1 quart vegetable stock
1 (16 ounce) can coconut milk
ΒΌ cup finely grated Parmesan cheese, or more to taste
sea salt and freshly ground black pepper to taste

Steps:

  • Heat coconut oil in a large saucepan over medium heat; cook and stir onion, coconut flakes, and garlic until onion is softened, about 10 minutes.
  • Bring a pot of water to a boil; add chard and cook just until leaves become brighter green, about 3 minutes. Transfer chard to a bowl of ice water to stop the cooking process.

Overall, I thought this soup was just okay. It wasn't bad, but it wasn't anything special either.

The soup was too thick for my taste. I think I would have preferred it if I had added more liquid.

I'm not a fan of coconut milk, but this soup was surprisingly good! The coconut milk added a creamy sweetness to the soup, and the chard gave it a slightly bitter note that balanced out the sweetness perfectly.

I'm not usually a fan of chard, but this soup converted me! The coconut milk and ginger really mellowed out the chard's bitterness, and the result was a creamy, flavorful soup that I couldn't get enough of.

This soup was a delightful blend of flavors! The chard added a slightly bitter note that was perfectly balanced by the sweetness of the coconut milk. I also loved the addition of ginger and lemongrass, which gave the soup a lovely aromatic flavor.
