CURRIED CARROT AND COCONUT SOUP

Curried Carrot and Coconut Soup image

There's a nice challenge in staring into a less than sufficiently stocked refrigerator. Last night we were down to not much more than carrots. Thus: them, an onion, grated ginger, a sort of curry mix. There was stock in the freezer, a can of coconut milk. A lime. Wish I'd had cilantro, but hey, it worked.

Time 30m

Yield 2 servings

Number Of Ingredients 13

3 tablespoons butter
1/2 medium onion, roughly chopped
3/4 pound carrots, peeled and cut into 1/2-inch coins
1 teaspoon peeled, grated fresh ginger
1/2 teaspoon ground cumin, to taste
1/2 teaspoon ground tumeric, to taste
1/2 teaspoon ground coriander, to taste
Pinch of cayenne pepper
2 cups chicken or vegetable stock
1 cup unsweetened coconut milk
Juice from ½ lime
Salt and freshly ground pepper
Cilantro, if you have it

Steps:

  • Heat the butter until the foam subsides. Add the diced chopped onions, sprinkle with salt, stir to coat with butter. Add the chopped carrots along with the spices. Stir and cook until softened, about 10 minutes.
  • Add the stock; there should be enough to cover the vegetables. Bring the pot to a boil over high heat. Reduce the heat to medium and continue cooking until the carrots are cooked through, about 10 to 15 minutes.
  • If you have an immersion blender, purée the soup in the pot. If not, wait until the soup cools slightly, and purée in a food processor. Add enough coconut milk (and a little more stock or water if necessary) to bring the soup to the consistency you want. Adjust the seasoning (depending on the stock you use, you may need more or less salt), and lime juice to taste. Garnish and serve.

CURRIED LENTIL SOUP WITH SWISS CHARD

Curried Lentil Soup With Swiss Chard image

I actually found this recipe on another blog. I decided to post it here for safekeeping and so I could keep notes. It really is delicious! I made some adjustments and prepared it in the crockpot (easy to do) but posted the recipe as written.

Time 35m

Yield 8-10 serving(s)

Number Of Ingredients 16

2 tablespoons olive oil
2 cups onions, chopped
1 cup carrot, chopped
1 cup celery, chopped
1 cup red bell pepper, chopped
2 large garlic cloves, minced
2 tablespoons curry powder
1/4 teaspoon cayenne (optional, leave out if you donà  t want it spicy, or use a little more if you like it really hot)
1 teaspoon ground cumin
1 tablespoon minced fresh gingerroot
1 lb red lentil, rinsed and picked over to remove any debris (about 2 1/4 cups)
8 cups water, vegetable stock or 8 cups chicken stock
1 (15 ounce) can coconut milk (stir well before using)
1 teaspoon salt
1 bunch swiss chard, ribs removed and leaves torn into bite-size pieces
1/2 cup chopped fresh cilantro

Steps:

  • Heat the olive oil over medium-high heat. Add the onions, carrots, celery, red pepper, garlic, ginger and spices and saute until the onion softens, about 5 minutes. Add the water or stock along with the salt, lentils and coconut milk, and bring to a boil. Reduce the heat and simmer until the lentils are cooked through, about 10 minutes.
  • While the soup is simmering, wash and prep the chard and chop the cilantro. After the lentils have finished cooking, stir the chard and cilantro into the soup - it will look like a lot of chard for the soup at first, but have no fear. The chard will wilt down as it heats up. Keep stirring until the chard is bright green and wilted, about another 2 minutes. Taste and season as needed with more salt or pepper, and serve.

Tips for Making Chard and Coconut Soup:

- Choose tender, young chard with vibrant green leaves and crisp stalks. - Thoroughly wash the chard to remove any dirt or debris. - To save time, chop the chard in advance and store it in an airtight container in the refrigerator for up to 3 days. - Use a sharp knife to thinly slice the leeks, onions, and garlic for a more flavorful soup. - Don't overcrowd the pan when sautéing the vegetables. Cook them in batches if necessary to prevent steaming and ensure they caramelize properly. - To enhance the soup's flavor, use a combination of vegetable broth and coconut milk. You can adjust the ratio to your preference for a richer or lighter soup. - Bring the soup to a boil, then reduce the heat and simmer for at least 15 minutes to allow the flavors to meld. - For a creamier soup, blend a portion of the cooked soup until smooth and then stir it back into the pot. - Season the soup to taste with salt, pepper, and additional spices such as cumin, coriander, or chili flakes. - Serve the soup hot, garnished with fresh cilantro, coconut flakes, or a drizzle of coconut cream for an extra touch of flavor and texture.
