Cheesy Breadsticks image

These Cheesy Breadsticks are tasty and easy to make. They complement perfectly many different dishes plus you can dress it up however you like...

2 tsp active dry yeast
1 c warm water (between 105-110ºf)
1 Tbsp honey
2 1/2 c bread flour
1 Tbsp italian seasoning
1/2 Tbsp garlic powder
1/2 tsp ground himalayan sea salt
1/2 Tbsp oil or as needed, for bowl
1/4 c unbleached all-purpose flour, for work surface
3 Tbsp butter, melted
2 tsp garlic salt
2 tsp hot paprika
3/4 c parmesan cheese, grated
3/4 c asiago cheese, grated

Steps:

  • 1. In the bowl of a stand mixer, combine hot water, yeast and honey; proof for 8 to 10 minutes or until foamy.
  • 2. In the meantime, combine in a medium bowl, 2 cups flour, Italian seasoning, garlic powder and salt; whisk to mix and set aside.
  • 3. Insert dough hook attachment and add about 2 cups flour mixture to the yeast (reserve ½ cup). Mix on speed 2 for 2 minutes. Increase to speed 3 and continue mixing by adding 1 tbsp. of remaining flour at a time until dough forms a ball and clings to the dough hook, cleaning the sides of the bowl. Increase speed to 4 and knead for 4 minutes.
  • 4. Form a ball by pulling dough under and placing it in a bowl lightly greased with oil; toss dough to coat. Cover with a clean kitchen towel and place it in a draft free spot such as an unheated oven. Let it rise for 30 minutes.
  • 5. Later, punch dough to deflate it and transfer to a work surface lightly floured. Stretch dough to about a 18 X 12-inch rectangular shape, flouring rolling pin and dough as well. If it stretches back, wait a couple minutes to let the gluten relax.
  • 6. Pour on melted butter and brush on evenly. Sprinkle evenly with garlic salt, paprika, parmesan and asiago cheese - or use what you like.
  • 7. Using a pizza cutter, slice dough in half and then divide each half into 9 long strips of 1-inch wide. Take one at a time and place it on a large baking sheet lined with a silicone mat. Twist each, starting from the middle and working your way out to each end.
  • 8. Transfer straws to a 375ºF preheated oven and bake for 18 minutes. Half way through cooking, rotate them to cook evenly. Remove from the heat and serve immediately. Makes 18 breadsticks
