Chicken Cordon Bleu image

4 chicken breasts
8 slices Swiss cheese
8 slices prosciutto
1 cup flour
2 large eggs, beaten
2 cups bread crumbs
4 tablespoons melted butter
1 teaspoon dried oregano
2 cups milk
1/4 cup flour
4 tablespoons butter
2 tablespoons Dijon mustard
1/4 cups Parmesan cheese

Steps:

  • Preheat oven to 400 degress
  • Slice breasts in halve. Pound thin. Place prosciutto and cheese in side. Roll up and secure.
  • Place flour, eggs and bread crumbs in three pans. Season flour with salt and pepper. Beat eggs. Mix melted cheese and oregano into bread crumbs.
  • Roll chicken into flour, then the eggs, then the bread crumbs, pressing to coat. Place on baking sheet. Bake until golden brown for 30 minutes.
  • For the sauce: Melt butter in pan, add flour and stir until golden, 2 minutes. slowly whisk in mild, then add mustard. Let simmer until thickened, 5 minutes. Add Parmesan and stir until melted. Season with salt and pepper.
  • Remove toothpicks from chicken and serve with sauce.
