Chicken Delight image

This recipe came from my desperation to do something different with a pack of boneless, skinless chicken breasts. I looked through several recipes and realized that I didn't have all of the ingredients that some of them called for, so I decided to take pieces from some of the recipes and add in the ingredients that I had on hand...

4 chicken breasts, boneless and skinless
1 pkg ranch style dressing mix
6 slice bacon, cooked, crumbled
1 c ken's honey mustard
2 c colby jack cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Pound chicken until about 1/2 inch thickness.
  • 3. Place chicken in a dish and sprinkle both sides with the Ranch Seasoning. (You may not need it all) Cover chicken and place in the refrigerator to marinate while you cook the bacon.
  • 4. Cook bacon over medium-medium/high heat and remove from pan. Leave bacon grease in the pan to cook the chicken.
  • 5. Place chicken in pan and cook on each side for 4-5 minutes or until the chicken is golden brown on each side. It will finish cooking in the oven. You may need to cook in 2 batches.
  • 6. Remove chicken from skillet and place in a 10x13 casserole dish that has been sprayed with non-stick spray.
  • 7. Drizzle honey mustard over the top of the chicken.
  • 8. Crumble bacon and place on top of the chicken.
  • 9. Place shredded cheese on top of the chicken
  • 10. Cook for about 30 minutes or until chicken is done and the cheese is melted and golden.
