I created this recipe because I wanted the ease of the crockpot AND wanted to use some spinach I had in the freezer. This recipe is great because you can use frozen ingredients!! I'm really proud of my creation because it's tasty, mostly healthy and everyone loved it! You can play around with the cheese toppings. I had planned to use Swiss, but used Monterey Jack instead because it was what I had on hand. I had also planned to use 1/4 cup of parmesan cheese, but only had 1/8 on hand, so that's what I used. 4 chicken breasts, boneless and skinless
1 pkg ranch style dressing mix
6 slice bacon, cooked, crumbled
1 c ken's honey mustard
2 c colby jack cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Pound chicken until about 1/2 inch thickness.
  • 3. Place chicken in a dish and sprinkle both sides with the Ranch Seasoning. (You may not need it all) Cover chicken and place in the refrigerator to marinate while you cook the bacon.
  • 4. Cook bacon over medium-medium/high heat and remove from pan. Leave bacon grease in the pan to cook the chicken.
  • 5. Place chicken in pan and cook on each side for 4-5 minutes or until the chicken is golden brown on each side. It will finish cooking in the oven. You may need to cook in 2 batches.
  • 6. Remove chicken from skillet and place in a 10x13 casserole dish that has been sprayed with non-stick spray.
  • 7. Drizzle honey mustard over the top of the chicken.
  • 8. Crumble bacon and place on top of the chicken.
  • 9. Place shredded cheese on top of the chicken
  • 10. Cook for about 30 minutes or until chicken is done and the cheese is melted and golden.

1 medium onion, chopped

This is an old old old recipe. I make it when I'm home on rainy Saturday afternoons, and then heat it up for work lunches. Comfort food without the cream of mushroom soup!

4 -5 cups cooked chicken (or turkey)
1/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried basil
1 1/2 teaspoons dried rosemary
1 cup raw rice
2 -3 cups chicken broth
3 tablespoons butter
1 onion
1 cup evaporated milk

Steps:

  • Place meat in a greased casserole dish (approximately 9 x 13 inches).
  • Sprinkle with salt and herbs (I never measure; I just sprinkle from the jar).
  • Saute onions in butter until clear.
  • Arrange onion over chicken.
  • Sprinkle rice evenly over the top and add chicken broth to cover.
  • Cover pan tightly with aluminum foil and bake at 350 degrees for one and a half hours.
  • Add evaporated milk. Cover again and bake another thirty minutes. Don't stir.

Who doesn't love cashews? These lovely nuts are like no other. Their flavor is delicate and lost if cooked however. Be sure to add the cashews to this dish with all heat off at the very end when ready to serve. Simply scrumptious! Enjoy!

1 cup brown rice (uncooked)
2 chicken breasts (boneless, skinless)
2 tablespoons oyster sauce
2 tablespoons olive oil
8 garlic cloves
6 carrots
2 cups broccoli
2 red peppers
2 orange peppers
2 yellow peppers
2 cups bamboo shoots
2 cups water chestnuts
1 cup cashews
1/2 teaspoon garlic salt
1/2 teaspoon Chinese five spice powder
1/2 teaspoon pepper
soy sauce (optional) or peanut sauce (optional)

Steps:

  • Tenderize and cut chicken into one inch pieces. Marinade in oyster sauce overnight. Cook rice until done yielding 3 cups cooked. Saute chicken and marinade in one Tablespoon olive oil until done. Thinly slice garlic and julienne carrots. Saute in olive oil for 5 minutes. Add broccoli and peppers and cook 7 minutes more. Drain bamboo shoots and water chestnuts, rinse thoroughly and add to vegetable mixture. Add seasonings and chicken and heat through. When ready to serve, toss in cashews, evenly distributing. Serve equal portions over 1/2 cup rice. Did in peanut sauce or season with soy sauce to taste. Enjoy!
