This salad is a great way to use up leftover chicken. It's also a great make-ahead meal. I like to make it the night before and then let it chill in the refrigerator overnight. The flavors meld together and the salad is even better the next day.

I'm not a huge fan of oranges, but I really enjoyed this salad. The dressing is light and tangy, and the oranges add a nice sweetness. I would definitely make this again.
