Something simple and quick I make for breakfast when I have leftover chili. (see my recipe box for my chili recipe). Made this for my hubby this morning. Yummy :)

Steps:
- 1. Wisk eggs, milk, and salt and pepper in a small bowl. Microwave left over chili for 30 seconds. On medium heat spray a small skillet with non stick cooking spray.
- 2. Add egg mixture to skillet. When egg is fully cooked add chili and cheese. Fold egg over. Cook for a minute until cheese is melted.
- 3. Top with more cheese and sour cream...or whatever you like :)
