Chili Cheese Omelet image

Something simple and quick I make for breakfast when I have leftover chili. (see my recipe box for my chili recipe). Made this for my hubby this morning. Yummy :)

Number Of Ingredients 6

2 eggs
dash of milk
1/2 cup leftover chili
1/2 cup mexican shredded cheese blend
salt and pepper
sour cream

Steps:

  • 1. Wisk eggs, milk, and salt and pepper in a small bowl. Microwave left over chili for 30 seconds. On medium heat spray a small skillet with non stick cooking spray.
  • 2. Add egg mixture to skillet. When egg is fully cooked add chili and cheese. Fold egg over. Cook for a minute until cheese is melted.
  • 3. Top with more cheese and sour cream...or whatever you like :)

This omelet was just okay. It was a little bland and the cheese wasn't melted all the way through. I think I would have liked it better if I had added some salsa or hot sauce.
