I had this dish at a wedding banquet and it was very good. The sweet lychee nicely compliments the apples and shrimp. I have also tried this dish with potatoes instead of apples, it's not as sweet, or try it with both. Great for light summer dinner, or as a surprising potluck dish.

This salad is a great way to get your kids to eat their vegetables. My kids love the shrimp and the dressing, so they don't even notice the vegetables.

I'm not a fan of grapefruit, so I used orange segments instead. The salad was still very good.

This salad was a bit bland for my taste. I think it could have used more seasoning. The shrimp was also a bit overcooked.
