Do you remember "pan" or "bar" cookies growing up? I used to make these almost every Friday after school with my girlfriends. And we had a special Tupperware container to store them, which went on top of the refrigerator, and all the other kids in the neighborhood knew where to get fresh cookies at the Juris household.

Steps:
- 1. Preheat oven to 350 degrees F.
- 2. Combine the oats, flour, soda, salt and cinnamon in a small bowl.
- 3. In a large mixing bowl, cream together the butter, sugars, vanilla and lemon.
- 4. Add the the eggs and mix until smooth.
- 5. Add the dry ingredients to the wet ingredients, in portions.
- 6. Stir in the chocolate chips.
- 7. Spread dough evenly in a non-stick cookie sheet.
- 8. Bake 15-20 minutes, until cookies are golden brown. Remove from oven and let cool in pan.
- 9. Slice and serve!
