My son came up with this one and it makes the list for comfort food....Delicious

Steps:
- 1. Saute onions, peppers and garlic in olive oil about 5 mins.
- 2. add in sliced chorizo as well as tomato sauce, tomato paste, white wine, bay leaf, potatoes and carrots, salt and pepper.
- 3. simmer 30 mins, till potatoes and carrots fork tender...serve over rice.
