Cider House Steak Salad image

Yum! This is perfect to serve for a lighter meal. Apple is the star flavor in this delicious steak salad recipe. Applesauce makes the dressing packed with flavor. And grilling apples brings out even more of their sweetness. Combined with the sweet, crunchy candied walnuts, there are many different textures making this one...

DRESSING
3 Tbsp honey
1/4 c applesauce, unsweetened
3/4 c olive oil
1/4 c apple cider vinegar
1 pinch salt
1/4 tsp fresh ground pepper
1/2 tsp cinnamon
SALAD
2 medium apples; 1 red and 1 green
1 medium medium thick steak of your choice cut into strips or chunks
1 small purple or red onion; sliced very thin
3 c chopped romain lettuce
3 c mixed salad lettuce
1 c large grated or small chunks of cheddar cheese
CANDIED WALNUTS
1 c walnut halves or pieces
1/2 c sugar
cinnamon

Steps:

  • 1. Spread walnuts on a cookie sheet sprayed very lightly with cooking spray. Sprinkle with the sugar and cinnamon. Bake about 10 to 12 mins at 225 degrees. Watch so as not to burn. Cool.
  • 2. Cut apples in half and slice very thin. Grill for 1 to 1 1/2 mins per side, long enough to get grill marks. Cool.
  • 3. Grill steak strips or whole steak to your desired temperature. Slice thin or cut into chunks.
  • 4. Toss all salad ingredients together in a large bowl. Chill.
  • 5. Make the dressing by whisking honey, olive oil, applesauce, and vinegar together in a small bowl. Add salt, pepper, and cinnamon. Can pour into a bottle or spoon on when serving.
  • 6. Serve by topping the salad ingredients with the steak and sprinkling with the walnuts. Add dressing.
