Coconutty Balls image

This easy little snack is sugar-free (if you use unsweetened coconut) and gluten-free. It is fun for kids to make and requires no baking. For a tasty but less healthy variation, add chocolate chips. Chill if desired. Enjoy!

½ cup almond flour
¼ cup cashew butter
¼ cup mashed banana
5 tablespoons shredded unsweetened coconut, divided

Steps:

  • Mix almond flour, cashew butter, banana, and 3 tablespoons coconut together in a bowl; roll into bite-size balls.
  • Spread remaining 2 tablespoons coconut in a shallow bowl. Roll balls in coconut to coat.
