Coffee Cup Scramble image

I got this at the Taste of Home Cooking School on a card from the American Egg Board. I haven't tried it yet, but it looks quick and easy.

Number Of Ingredients 4

2 eggs
2 tablespoons milk
2 tablespoons shredded cheddar cheese
salt and pepper

Steps:

  • Coat 12 oz microwave safe coffee mug with cooking spray. Add eggs and milk; beat until blended.
  • Microwave on high 45 seconds; stir. Microwave until eggs are almost set, about 30-45 seconds longer.
  • Top with cheese; season with salt and pepper.
