Corn and Spinach Salad image

As a child, I loved the combination of fresh spinach, crunchy nuts, a good tangy cheese and red onions. I would search different restaurants to discover how chefs prepared such a special salad. Here is my own creation.

This salad is a great make-ahead dish. I made it the night before, and it was just as good the next day.

I followed the recipe exactly, but my salad didn't turn out as good as the picture. The dressing was too runny, and the corn was overcooked.

This salad is a great way to use up leftover corn. I had some leftover grilled corn, and this salad was the perfect way to use it up.

I thought this salad was just okay. The dressing was a little too sweet for my taste, and the corn was a bit bland.

I'm not usually a fan of spinach salads, but this one was surprisingly good. The dressing was light and flavorful, and the corn and spinach were fresh and crisp.
