Cottage Cheese Onion Muffins image

This recipe comes from The Original Vidalia Onion Cookbook that I received years ago with a gift box of Vidalia onions. While I haven't made these muffins yet, I love muffins and this sounds like something that would be great with a steak dinner. I'm posting it here since I always forget to dig through my cookbooks now that there are so many great recipes online.

I'm not a big fan of cottage cheese, but these muffins were surprisingly good. The onion flavor really balanced out the cottage cheese.

These were so easy to make and they turned out great! I used a food processor to chop the onions and it made it really quick. I also added some chopped bacon to the batter, which was a nice addition.

These muffins were a hit! I made them for a brunch party and they were gone in minutes. The cottage cheese gives them a moist and fluffy texture, and the onions add a nice savory flavor.
