Crab Stuffed Hash Browns image

I was trying to figure out a dish to use up various ingredients that I had in the fridge to keep them from getting out dated and this was the result. Nice and creamy and a new comfort food for our family.

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 13

2 lbs frozen hash browns, thawed
1 cup sour cream
8 ounces cream cheese, room temperature
4 slices bacon
1 (10 3/4 ounce) can cream of mushroom soup
2 cups shredded cheddar cheese
1 cup breadcrumbs
1/2 cup butter, melted
12 ounces crabmeat (can substitute imitation)
8 ounces cream cheese, room temperature
2 teaspoons chopped garlic
1/4 teaspoon Worcestershire sauce
1/2 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Thaw the frozen hash browns, if you have to pop them in the microwave.
  • Dice the bacon and fry it up fairly crisp.
  • While the bacon is frying and the potatoes are thawing combine all of the stuffing ingredients in a medium bowl.
  • Mix together in a large bowl: 1/4 cup of the melted butter, mushroom soup, sour cream, cream cheese, bacon and shredded cheese.
  • Fold in the thawed hash browns.
  • Lightly grease a large casserole dish. Mine is a 3 quart.
  • Spread 1/2 of the potato mixture in the bottom of the casserole.
  • Layer the stuffing on top of the potatoes leaving a narrow gap around the edges.
  • Top that with the rest of the potatoes.
  • Mix the rest of the melted butter with the bread crumbs and sprinkle on top of the potatoes.
  • Bake for 1 hour, top should be golden brown.
  • Let rest for a few minutes when you take it out before you serve.

Overall, this was a good recipe. The crab stuffing was flavorful and the hash browns were crispy. However, I found that the dish was a bit too greasy for my taste. Next time, I'll try using less oil when cooking the hash browns.

This dish was a bit too bland for my taste. I think next time I'll add some chopped bell pepper, onion, or jalapeno to the crab stuffing to give it more flavor.

The crab stuffing was a bit too runny for my taste, but the hash browns were crispy and golden brown. I think next time I'll try using less liquid in the stuffing or adding more breadcrumbs to thicken it up.

I was worried the crab and potato combo wouldn't work, but it totally did! The flavors complemented each other perfectly. I appreciate that this recipe didn't have a ton of extra ingredients, making it easy to whip up on a busy weeknight.

This was a great way to use leftover crab from a seafood boil. The stuffing was flavorful and the hash browns added a nice crispy texture. I'll definitely be making this again!

I made a few modifications to the recipe based on ingredients I had on-hand - a mix of imitation crab, sour cream, and green onions in the stuffing, and regular potatoes instead of hash browns. Turned out delicious! The dish was hearty, but not too h

This dish was a bit too salty for my taste, but I think that was because I used canned crab meat. I would recommend using fresh crab meat if you can find it.
