Cranberry-Glazed Ham Loaf image

Number Of Ingredients 10

LOAF
2 pounds ground ham
3/4 pound extra-lean ground beef
1 cup soft bread crumbs
1 cup cranberry juice cocktail
2 eggs, slightly beaten
GLAZE
1/2 cup cranberry juice cocktail
1/3 cup firmly packed brown sugar
1/2 teaspoon dry mustard

Steps:

  • 1. Heat oven to 350°F. In large bowl, combine all loaf ingredients mix well. Shape into 2 loaves. Place side by side in ungreased 9-inch square pan. Bake at 350°F. for 1 hour. Drain.2. Meanwhile, in small saucepan, combine all glaze ingredients. Bring to a boil. Reduce heat to low simmer 1 minute or until brown sugar is dissolved, stirring constantly.3. Brush ham loaves with part of glaze. Bake an additional 25 to 30 minutes or until meat is firm, basting frequently.
