1 egg
1 cup corn oil
1/3 cup white wine vinegar
1/4 teaspoon sugar
2 teaspoons garlic, minced
2 teaspoons dried tarragon
1/4 cup Dijon mustard
1 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • Whizz the egg in a food processor until light-colored.
  • Gradually add corn oil so that it is well homogenized.
  • Add remaining ingredients.
  • Chill before using.
