Creamy Make-Ahead Mashed Potatoes image

The key to a great dinner party or holiday dinner is to make anything and EVERYthing ahead of time as possible! Last minute things should be minimal. When you do this, you will have a stree-free dinner and get to spend time with your guests instead of being all tied up in the kitchen. This recipe is a life saver!! :D Photo by...

Time 1h25m

Number Of Ingredients 9

10 large potatoes, peeled and quartered
8 oz. sour cream
8 oz. onion and chive cream cheese, or sub plain for a milder flavor
6 Tbl. butter, divided
*(2 tbl. dried onion flakes if using plain cream cheese)
1/2-1 tsp. salt
*pats of butter
*paprika
*finely minced parsley, optional

Steps:

  • 1. Place potatoes in large pot, cover with water, and bring to a boil. Reduce heat, cover, and cook for 20-25 minutes or until potatoes are tender. Drain potatoes, place in large bowl, and mash with sour cream, cream cheese, onions, salt, and 4 tablespoons of butter, stirring until butter and cream cheese have melted. Spread potatoes into greased 13 x 9 baking dish. Melt remaining butter and drizzle over potatoes. Sprinkle with paprika, cover, and refrigerate until ready to use (you can bake these right away, of course). Refrigerated potatoes need to sit at room temperature for 30 minutes before baking. Cover with tin foil and bake at 350 degrees for 40 minutes, then remove foil and bake for another 20 minutes. Remove from oven and add additional pats of butter and parsley if desired.

This recipe is a waste of time. My mashed potatoes were bland and tasteless.

I followed the recipe exactly and my mashed potatoes turned out lumpy. Not sure what I did wrong.

These mashed potatoes were a bit too runny for my liking.

Not a fan of the sour cream, but the rest of the recipe was good.

A bit too much cream cheese for my taste, but otherwise a good recipe.

I'm not a huge fan of mashed potatoes, but these were really good. The cream cheese and sour cream gave them a really rich flavor.

This recipe is a keeper! I've made it several times now and it always turns out perfect. The potatoes are always fluffy and creamy, and the flavor is amazing.
