Crispy Baked Tuna Balls - Good! image

This is a flavorful and quick and easy appetizer that my husband, friends and I enjoy. It is also good as a snack for both children and adults, although for kids you may want to tame down the spiciness a bit by using a smaller amount of mustard and/or lemon juice. 1 6.5-oz can(s) water packed tuna, drained
1/4 -1/2 c fine dry bread crumbs
2 Tbsp minced onion
2 Tbsp chopped parsley
2 Tbsp chopped almonds
3 Tbsp mayonnaise
1 Tbsp lemon juice
1 tsp mustard
1 egg
3 Tbsp butter, melted
1 c crushed potato chips or crushed corn flakes

Steps:

  • 1. Pre-heat oven to 350 degrees.
  • 2. In bowl, thoroughly mix together the tuna, bread crumbs, onion, parsley, almonds, mayonnaise, lemon juice, mustard, and egg. Shape into 1-inch balls.
  • 3. Dip each ball in the melted butter. then roll to coat in the chips or corn flakes. Place in shallow baking pan. Bake about 10 minutes, or until light brown.
