One night I had my daughter over for dinner and she really wanted a dessert. I did not have anything sweet in the house ready made and it was about TV time so I came up with this very easy and quick dessert.

Steps:
- 1. In a 12 inch frying pan add oil and bring to a shimmering heat on high, about 350. Turn down the heat enough to keep the oil at 350.
- 2. Slowly slide in one tortilla and let fry for 30 seconds or until the underneath side is browned in spots. Turn over with tongs and let it fry again for about 20 seconds. It is still hot so the second side will not take as long. Remove from oil and immediately sprinkle with sugar and cinnamon mixture. Set aside on paper towels. Repeat with second tortilla.
- 3. Cut into quarters and serve.
