Crock Pot London Broil image

Your whole crew is going to love this delicious roast. It's an easy to make, economical meal. We loved the extra tang and kick pepperoncini peppers give the gravy (they're a sweet, mild chili pepper). You can even add a bit of their juice to the Crock Pot for even more flavor. This is a hearty set it and forget it slow cooker...

Number Of Ingredients 6

2 lb London broil
1 pkg ranch style dressing mix
1 pkg au jus gravy mix
6 medium pepperoncini peppers
1/2 stick butter, cut up
8 medium red potatoes, whole

Steps:

  • 1. Spray bottom and sides of a 6 quart oval Crock Pot with cooking spray to make clean up easier.
  • 2. Place London broil in the bottom of Crock Pot.
  • 3. Sprinkle the ranch dressing mix on the meat. Spread it around so it covers the top.
  • 4. Sprinkle the au jus mix on the meat. Spread it around so it covers the ranch mix.
  • 5. Remove stems and place the pepperoncini on top of the powdered mixes.
  • 6. Add the cut up butter to the top of the mixes.
  • 7. Add the potatoes around the outer edge of the meat. They do not have to sit on the bottom. DO NOT ADD ANY LIQUID!!!!
  • 8. Cover and cook for 4 hours on high or 8 hours on low.
  • 9. Remove potatoes. Cut meat into serving pieces and stir into sauce in bottom of Crock Pot. Return potatoes to pot. Serve
