Crustless Zucchini Quiche image

All the yum, none of the hassle! This is a wonderfully flavorful crustless quiche - Definitely worth a try.

Number Of Ingredients 10

3 c chopped zucchini
1/2 c chopped onion
1/2 c shredded cheese (cheddar, mozzarella, etc.)
1/2 c grated parmesan cheese
1 c Bisquick
4 eggs, slightly beaten
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/2 c oil

Steps:

  • 1. Mix Bisquick, zucchini, oil, eggs, onion, parmesan cheese, cheddar cheese, salt, pepper, and garlic powder in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.
  • 2. Pour into a greased pie plate.
  • 3. Bake at 350 degrees for 40 minutes.
