CUCUMBER RADISH SALAD image

This salad is just waiting for someone to eat I can hear it say EAT ME EAT ME. My mom made this salad and what a treat.

Number Of Ingredients 11

3 cucumbers cut into1/2 inch pieces
3 garlic cloves lightly crushed
1 small dried red chili crushed
1/2 tsp sugar
kosher salt
2 Tbsp fresh lime juice
1/4 c olive oil, extra virgin
4 radishes thinly sliced
1 c mixed herbs, such as cilantro, parsley, basil tarragon chives
freshly ground pepper
1-( 8 ) oz piece of burrato or fresh mozzerella quarted

Steps:

  • 1. In a large resealable plastic bag, combine the cucumbers, garlic, chili, sugar, 1/2 teaspoon of salt and 1 tablespoon of the lime juice. Seal and shake the bag squeezing slightly to mash the cucumber and release the juices . Let stand at room temperature for 30 minutes
  • 2. Drain the cucumbers, reserving 2 tablespoons of the cucumber juice discard the garlic and chili In a medium bowl, whisk the cucumber juice with the remaining 1 tablespoon of lime juice and 2 tablespoons olive oil
  • 3. Add the cucumbers, sliced radishes, and the herbs and season the salad with salt and pepper
  • 4. Arrange the salad on plates. Place a piece of burrata or mozzarella alongside each serving, drizzle with the remaining 2 tablespoons of olive oil and serve.

This was a great recipe! The salad was easy to make and very tasty. I used a mandoline to slice the cucumbers and radishes, which made it even easier. I will definitely be making this again.
