Dad's Fried Crappie image

My dad has been frying fish in this batter since at least the 1970's. The breading is somewhat sweet. We think it's important to use 7-up and Aunt Jemima pancake mix. A biscuit mix does not work!

This recipe is a great way to use up leftover crappie. I always have a few fillets left over after a fishing trip and this recipe is the perfect way to use them up.

The breading was a bit too thick for my liking. I'll try using less next time.

The crappie was a bit bland for my taste. I think I'll add some more seasoning next time.
