A sports drink freezes into an icy blue sea. The treetops are a blend of ripe honeydew melon and simple syrup, frozen in plastic molds for making candy. Eat the top first, then push up the bottom or pull it out of its plastic cup by the stick.

Yield Makes about 1 dozen

Number Of Ingredients 2

Honeydew Syrup
1 liter blue sports drink

Steps:

  • Fill pyramid molds with honeydew syrup. Freeze about 30 minutes, until mixture starts to harden, then insert a wooden pop stick into each pop. Freeze until hard.
  • Fill each 3-ounce cup with the blue drink. Place cups on a small metal baking pan; freeze until almost frozen, about 50 minutes. Unmold each frozen pyramid pop, and insert its pop stick into an almost frozen blue base. Freeze until entire pop is frozen solid; overnight is best.

I'm not a big fan of popsicles, but these were really good. The fruit flavor was refreshing and the coconut milk made them creamy and rich.
