Diabetic Strawberry/Rhubarb Crisp image

I was at the grocery store today[5-10-12] and there was the fresh rhubarb. I love that stuff and never see it (we ate it a lot as kids & had a rhubarb patch out back). Anyway hubby said he did not like rhubarb (he loves stawberries though).... so i decided to make this. It just came out of the oven & smells soooooooooooo good!...

This crisp was a bit too sweet for my taste, but my kids loved it. I'll try reducing the amount of sugar next time.

This recipe was easy to follow, even for a beginner baker like me. The crisp turned out amazing - golden brown and bubbling. The flavor was out of this world, with the perfect balance between sweet and tart. I'll definitely be making this again!
