Steps:
- Sweat the Shallot in a saucepan with oil salt and pepper, add the garlic, tomatoes, habanero, Mangoes, salt and pepper to taste, (you need more than you think),ketchup, liquid smoke and honey. Bring to heat and simmer for at least an hour longer is better, let the flavors combine and reduce. Once you're done simmering and the sauce tastes good remove it from the heat, and once it cools, either blend or food process it until its smooth. Ready to serve
