Double Cheese Macaroni & Cheese image

The recipe is from "Mary Masters, My Great Recipes" cards I used to get in the mail every couple of months. I made it for my (then) future husband and it's the best baked macaroni and cheese either of us have ever tried. Our 2 sons loved it too! You can use other varieties of macaroni or cheese for a change of pace.

2 c uncooked elbow macaroni
1-1/2 c shredded cheddar cheese
12 oz cottage cheese
1/4 c butter
1/4 c flour
2 c milk
1/2 tsp salt
1/8 tsp black pepper

Steps:

  • 1. Cook macaroni according to package directions; drain.
  • 2. Alternate layers of macaroni, cottage cheese, and cheddar in greased 2-quarty baking dish, beginning with macaroni and ending with cheese.
  • 3. Melt butter in saucepan; stir in flour and blend until smooth.
  • 4. Blend in milk; heat to boiling, stirring constantly, and cook until thickened, about 2 minutes. Add salt & pepper.
  • 5. Pour sauce over macaroni & cheese.
  • 6. Bake at 375 for 30 minutes.
