Easy Tofu Chili image

1 can black beans
1 can diced tomatoes (drained)
1 can corn (drained)
2 T. chili powder
2 T. ground cumin
1 T. salt
½ T. ground cinnamon

*You may substitute two packages of taco seasoning mix for the seasonings and salt.

1 package of Wildwood® Hi-Protein Super Firm, Extra Firm or Firm SprouTofu®
1 can pinto beans
1 can kidney beans

Steps:

  • 1. Place all ingredients in a large stockpot.
  • 2. Cook over medium high heat mashing the tofu with a wooden spoon for 30 minutes.

This chili was just okay. The tofu was a bit bland, and the chili lacked flavor. I added some extra spices and hot sauce, but it still wasn't very good. I wouldn't make this again.

This chili was easy to make and turned out great! I used ground turkey instead of tofu, and it was still delicious. I also added some chopped bell pepper and chili powder for extra flavor. I will definitely be making this again!
