Father Mark's Caesar Dressing image

This rich Caesar dressing will get lots of attention! Prepare ahead of time and refrigerate. It only gets stronger with age. Serve with romaine lettuce and garlic- or Caesar-flavored croutons. This Caesar salad also goes well with some crusty French bread.

½ cup mayonnaise
½ cup Parmesan cheese
1 (2 ounce) can anchovies
3 tablespoons lemon juice
2 tablespoons olive oil
6 cloves garlic
1 jalapeno pepper, seeded
¼ teaspoon salt

Steps:

  • Blend mayonnaise, Parmesan cheese, anchovies, lemon juice, olive oil, garlic, jalapeno pepper, and salt together in a food processor until smooth. Refrigerate dressing for flavors to blend, at least 4 hours.
