Sometimes I add 1/2 cup of helmans mayonaise to this. This is good served on top of lettuce, on in a pita pocket or just in a bowl. Its good without the chicken too!

Number Of Ingredients 11

leftover chicken breast or roasted chicken chopped
2 can(s) black beans drained
1 can(s) corn drained
1/2 medium onion diced
3 or 4 serranos or jalepenos seeded and diced
1/4 c chopped cilantro
1 or 2 clove garlic minced
juice from 1 lemon or lime (i use the lemon juice)
2 avocados diced
salt to taste
1 large tomatoe diced

Steps:

  • 1. toss all ingredients in a large bowl,mix well, serve.
