Steps:
- 1. Make batter: Whisk together flour, baking powder, salt and sugar. Set aside. Mix milk, egg and melted butter. Add to dry ingredients. Blend well.
- 2. Add chopped jalapenos (deveined and seeded), corn, and cheese to batter. Stir until just blended.
- 3. Heat oil to 350 degrees. Carefully drop spoonfuls of batter into hot oil. Fry on each side until golden brown (about 1 minute per side). Drain on a paper towel.
- 4. Mix sour cream, chili powder and juice of one lime (optional). Dip Fiesta Corn Fritters into creamy sauce.
