Fruit and Onion Relish image

Oh this is a wonderful fruity relish with caramelized onions and so good with your BBQ hot dogs,burgers, pulled pork,sub sandwiches, grilled chicken or as any sandwich condiment.. Great inside quesadillas with cheese or on your nachos too!

Number Of Ingredients 8

3 Tbsp pour olive oil (i use crisco olive oil)
4 c thinly sliced sweet viadahlia onion
1/3 c simply fruit apricot spreadable fruit-in the jam aisle
1//4 c golden raisins
2 tsp apple cider vinegar
2 tsp dijon mustard
2 Tbsp rosemary, chopped fine
s & p to taste

Steps:

  • 1. Heat oil in a large skillet over medium heat. Add onions and sauté for 5 minutes or until just beginning to soften. Reduce heat to low and cook 25 minutes ,stirring often, until onions turn golden. Remove from heat.
  • 2. Stir in spreadable fruit, raisins, vinegar, mustard and rosemary. Season with salt and pepper.
