Fruit Enchiladas image

These were brought & shared to a birthday dinner, they are delicious.

Number Of Ingredients 8

1 can(s) pie filling of your choice
1 pkg 10 count (6 inch) flour tortillas
1/3 c butter
1/2 c sugar
1 tsp cinnamon
1/2 c water
1/2 c packed, brown sugar
1/2 tsp vanilla

Steps:

  • 1. Preheat oven to 350 degrees. Heat whole pkg. of tortilla's in microwave for about 30 seconds.
  • 2. Spoon fruit filling evenly onto tortilla's. Roll and place them seam side down in a lightly greased baking dish.I used a 13x9.
  • 3. In a small sauce pan add butter,cinnamon,butter & both sugars and water. Bring to a boil, reduce heat and simmer for 3 minutes, then add the vanilla.
  • 4. Pour the sauce over the tortilla's. Cover and bake for about 20 minutes. Serve warm. *Top with your favorite ice cream*
