GAELIC CHICKEN image

4-5 chicken breasts, cut in half lengthwise
1 bunch scallions
3 shallots
8oz pkg sliced mushrooms (or to taste)
2 roma tomatoes
1.5 cups heavy cream
1 shot whiskey
beef and chicken bouillon
1 stick butter

Steps:

  • Preheat oven to 350. Melt 5 Tbsp butter in 12 inch skillet over medium high heat. Dredge chicken in flour/salt/pepper mix, shake off excess, place in skillet. Brown each side. Place skillet in oven until chicken reaches 155. While chicken is in oven, dice vegetables, melt 3 Tbsp butter in saute pan, sautee vegetables for 5 minutes or until soft. Put cream with vegetables, add whiskey and 1 tsb beef and 1 tsp chicken bouillon. Bring to boil, reduce temp to simmer. When chicken is done, serve over mashed potatoes, layering with chicken and sauce.

This Gaelic chicken was a bit bland for my taste. I added some extra herbs and spices to the sauce and it was much better. The chicken was cooked perfectly, though.
