Gerda's Quick and Easy Broccoli Casserole image

An easy to make, healthy, delicious side dish. One of my friends tried it with frozen spinach and loved it, so either broccoli or spinach will bring you a fabulous vegetable dish minus the cheese, but if you must have cheese add about 1/2 cup Cheddar cheese on the top of the casserole before baking.

This casserole is a great way to use up leftover broccoli. I also like to add some cooked chicken or sausage to make it a heartier meal.

I'm not a big fan of broccoli, but I loved this casserole. The cheese sauce and bread crumbs really helped to mask the flavor of the broccoli. I would definitely make this again.

I love this recipe because it's so versatile. You can add or remove ingredients to suit your taste. I often add some cooked bacon or diced tomatoes. I also like to experiment with different types of cheese.
