Time 1h10m

Yield 4 portions, 4 serving(s)

Number Of Ingredients 7

1 lb green beans, trimmed, washed, drained, and cut into thirds
1 medium onion, chopped
2 tomatoes, chopped
1 teaspoon salt
1/3 cup extra virgin olive oil
3 1/2 teaspoons sugar
1/2 cup water (or more)

Steps:

  • Place onions and tomatoes in a saucepan. Sprinkle with salt and stir gently. Add green beans, olive oil and sugar; stir. Cover and cook over medium low heat, stirring occasionally, for about 15 minutes until beans are softened. Once the liquid has been absorbed, stir fry a couple of minutes. Add 1/2 cup water, cover, and simmer 40 minutes until beans are tender. The beans will be moist, but not watery.
  • Serve cold or room temperature.

These green beans were a bit bland for my taste. I think I would have liked them better if I had added some salt and pepper, or maybe some herbs.
