Grilled Bacon & Pimento Cheese Sammie image

I know my mom, Linda Whitehead, isn't the first person to come up with this, but considering she likes to make homemade pimento cheese to go on it, I figure she has earned a spot in the family cookbook I'm creating. Mom, this one's for you.

Number Of Ingredients 5

your favorite recipe of pimento cheese
bacon, cooked, as much as you like
mayonnaise
2 slice of your favorite bread (i like sourdough)
butter

Steps:

  • 1. Slather mayo onto the bread.
  • 2. Top one of the slices with a generous helping of your favorite pimento cheese.
  • 3. Top the pimento cheese with slices of fresh cooked bacon.
  • 4. Top that with the other slice of bread, mayo side down.
  • 5. Spread a little butter on both sides of the outside of the sandwich, and place in a skillet or on a griddle.
  • 6. Flip the sandich halfway through the cooking process. Ensure both sides are cooked to your liking, and the ingredients inside are nice and hot.
  • 7. Enjoy with a napkin and a smile.
